Mabon Ruby Red Wine

Ingredients:

General Pupose Wine Yeast
1 1/2 Pounds White Sugar
2 Pounds Blackberries
2 Pounds Elderberries
1/2 Pound Raisins
6 Pints Cold Water
2 Pounds Sloes
1 Pound Apples
Yeast Nutrient
Pectic Enzyme

Directions:

Juice the berries, raisins and apples in an electric juicer and remove any pits you find in the pulp. Place juice, pulp, 6 pints of water, the campden tablet and enzyme in a large clean container and cover and leave for 1 full day. Mix in 1 1/2 pound sugar, and the yeast nutrient. Re-cover and leave for 48 hours, stirring at least once per day. Strain liquid into a new container, add another pound of sugar and re-cover and for another 36 hours. Pour liquid into a fermenting jar and age as you would any wine.
